something to talk about ~ week 7

my something to talk about this week is actually two things: first another puree recipe (as promised last week) and second an idea to bring more peace into your home. for those of you looking for the super saturday tutorials, don’t you worry those will be up tonight…or at the latest tomorrow morning. i need to figure out a scanner before i can reveal those. silly technology.

 macaroni and cheese with a twist!

ingredients:

1 1/2 cups elbow macaroni
nonstick cooking spray
1 tbls. olive oil
1 tbls. all purpose flour
1/2 cup skim milk
1/2 cup butternut or cauliflower puree (i used cauliflower this time)
1 1/2 cups shredded cheddar cheese
4 ounces cream cheese
1/2 tsp. salt
1/8 tsp. paprika (i actually left this out)
1/8 tsp. pepper

directions:

cook your macaroni according to directions and drain. while macaroni is cooking, coat a large saucepan with nonstick cooking spray and heat over medium heat. add the oil, then the flour, and cook, stirring constantly, until the mixture resembles a thick paste but has not browned. about 1 to 2 minutes.

add the milk and cook, stirring ever now and then, until the mixture begins to thicken, 3 to 4 minutes. add the vegetable puree, cheddar, cream cheese and seasonings, and stir until the cheese is melted and the sauce is smooth. stir in macaroni and serve warm.

i love that these recipes allow me to sneak some veggies into my son’s diet. over the last month or so he’s turned from someone who’ll eat anything, to a very picky eater. i’m hoping it’s just a phase, but until the phase ends i’ll be pureeing up a storm. this recipe was also from the book deceptively delicious, just in case you’re wondering. all my puree recipes for the next while will be from that book.

…and last but not least for something to talk about, i came across a blog called women living well a while ago and loved some suggestions the author, courtney, gave for bringing more peace and harmony in your home.

1. go buy a large candle and light it in your home every day & when you notice the candle throughout the day stop and say a prayer for peace in your home.

2. play soft music in your home.

3. add some tender moments with your family to your schedule. spend quality time together.

4. focus on the kitchen, the heart of the home. cook things with a pleasant aroma, make a big deal about family dinner.

the main thing on this list that stood out to me is actually #1. lighting a large candle and praying for peace in your home when you see it. i have actually lit a candle almost every day since i read this and try to say a little prayer when i see it. if nothing else, i know that this little ritual helps calm me down and remind me of what my goal is for my home. it’s great reminder of one of my priorities throughout the day. i also have been trying to implement more soft music into our routine as well. the past few weeks i have especially tried to focus on playing church music or calming instrumental music while we are getting ready on sundays and throughout the day on sunday.

i thought i would share these tips today because it seems that this week is the beginning of what can be insane holiday chaos for the next 6-7 weeks and i think it is so so important that our homes are a place of peace, love & harmony. that they are a refuge to come home to a night. do they need to be perfect and white glove worthy 24/7? definitely not, but we should be trying to foster a positive & happy environment all the time.
