one of my all time favorite treats is peanut butter rice krispies with milk chocolate butterscotch on top! i heart them. i love them. i adore them. i can eat an entire pan of them in a day. they are by far one of my most favorite desserts ever. hands down. period. they are that good (at least to me).
here is the recipe for those of you who would like to enjoy them in your own home. there are many recipes out there probably, but i assure you, this one is tried and true for all you chocolate and peanut butter lovers out there. i can’t be the only one of us.
peanut butter rice krispies with chocolate
1 cup karo syrup
1 cup sugar
1/2 cup peanut butter
3 – 4 cups rice krispies
1 bag milk chocolate chips (the regular size bag)
1 bag butterscotch chips ( the regular size bag)
mix & melt the sugar, karo, and peanut butter on medium high or high until it comes to a boil. stir pretty continuously. once it comes to a boil, give it a second or two, then take it off.
add 3-4 cups of rice krispies to the mixture – it’s probably closer to 4 cups. i eyeball it and add a little here and there after 3 cups to get the consistency i like.
press rice krispies in the bottom of a 9 x 11 pan. i usually spray the pan to make them easier to dig out. up to you though.
melt 1 bag of milk chocolate chips and 1 bag butterscotch chips in the microwave. takes about 2-3 minutes. keep in mind once you take it out and stir it, it will continue to melt some as you stir. so try checking it and stirring it after about 2 minutes. 5 minutes is way too long…found that out the hard way!
once chocolate mixture is melted, spread on top of rice krispies and either dig in immediately (i usually do) or allow to cool and set. takes an hour or two for the chocolate to set again. i think??? i can never wait.
then enjoy and try not to think about how many calories are in one little bar. although, believe you me, the extra time at the gym is totally worth it!
* side note – my mom only uses a half a bag of chocolate and butterscotch chips each, i prefer a solid, thick layer of chocolate on top though and use the entire bag of each. it’s totally a matter of personal preference though.
