Just finished reading Motherhood Matters by Connie E. Sokol – perfect read for Mother’s Day! The book is divided up into bite-sized pieces of inspiration. The chapters are literally only a few pages long  – much like my attention span these days with my little crowd of three under the age of four. I’ve been sneaking in vignettes in when I am nursing my baby and they are the perfect pick me up during my crazy days.

What I love about Connie Sokol is that she is so REAL.  I’ve seen her speak at Education Week and other events. Her stories are incredibly applicable and her advice is 100 percent down to earth. I’ve also devoured her book Faithful Fit and Fabulous – another fast read full of helpful information and inspiration. The thing I love most about reading Connie’s books or listening to her speak, is that as soon as I am done and I want to get up and do something.  I am going to be brutally honest. The first thing that popped into my mind when I read this quote was a picture my 4-year old took of me with my camera phone when I was on the computer and trying to get something done. It was NOT a sunny face. And there wasn’t just one not so sunny face. She had taken multiple pics on multiple days. I deleted those suckers and wished that I could delete them from my little girl’s memory as well.

You better believe I am working on more sunny moments now. Some days I just have to choose peace over productivity. The dishes sit while I snuggle my cuddly two year old. The laundry piles up some days so that I can be present when my four year old wants to tell me stories. And I am just drinking in my 7 month old’s babiness because I know it will not last.

I LOVE Banana Nut Bread! In fact, it’s a serious weakness of mine at Starbucks. We have a Starbucks literally only a block or two away from our house and I’m always so tempted just to swing by and grab a slice. A Caramel Cream Frappachino or Hot Chocolate (depending on the season) and a slice of Banana Nut bread = a perfect treat!

Of course, being as it is that we are still in the medical school years, my budget doesn’t really allow for stopping at Starbucks daily for a $3.00 slice of bread.

So, I went in search of an easy Banana Nut Bread recipe that I could make myself for a fraction of the cost. After trying out a few different recipes, here is the winner!

Banana Nut Bread

Use a loaf pan that measures 9″x 5″x 3″

Ingedients

2 cups all-purpose flour
3/4 cup sugar
3/4 tsp. baking soda
1/2 tsp. salt
3 very ripe, soft, darkly speckled bananas (mash well)
1/4 cup plain yogurt
2 eggs, beaten lightly
6 Tbs. butter, melted and cooled
1 tsp. vanilla extract
1 1/4 cups walnuts, chopped coarsely

1. Adjust oven rack to lower-middle position and heat oven to 350 degrees. Butter and flour loaf pan. Make sure to use a generous amount of both.

2. Whisk together dry ingredients in a large bowl and set aside. In separate bowl, mix mashed bananas, yogurt, eggs, butter and vanilla. Fold banana mixture into dry ingredients with rubber spatula just until combined and batter looks thick and chunky. Fold in walnuts. Scrape batter into prepared pan and smooth surface with rubber spatula.

3. Bake until loaf is golden brown and toothpick inserted in the center comes out clean, approximately 55 minutes. Cool in pan for 5 minutes and transfer to wire rack. Serve warm or at room temperature.

My favorite way to eat it of course is warm! I love a thick crust and warm gooey inside! Plus, I love how this makes our kitchen smell. 
 
I may just have to make two loaves the next time I make this. One loaf to eat right away and one to freeze. I am really trying to have more homemade food in our fridge & freezer versus store bought pre-packaged goods with tons of preservatives & who knows what in them. This bread would be a perfect freezer recipe and I’m all about baking once, enjoying twice! Enjoy!

I must admit, I don’t know much about Bethenny Frankel. The following quote from her stood out to me though as I was flipping through a magazine the other day. Basically she was being asked how she is able to accomplish everything that she does. This was her response:

“If you are organized, don’t procrastinate and come from a place of yes, you get it done. Take things step by step, day by day.” 

I have actually ripped the quote out of the magazine I was reading and have placed it on my quote board by my computer. It summarizes how I want this next year to go. I want to get things done now, not later. I want to be more organized & I want to come from a place of yes & positivity as opposed to a place of limit & negativity.

It’s funny though how all three things are intertwined. It’s hard to come from a place of yes if you aren’t organized & it’s hard to be organized if you are always procrastinating. Right? Right!

My goals this week are to say yes more often to Titan, to cross off three things on my list that I’ve been procrastinating & to spend 30 minutes each day getting better organized. I’ll report back at the end of the week.
