While we were in Utah for Spring Break we had the opportunity to stop in Zilio’s Artisan Pizza for dinner one evening. While we were there we got to try out their brand new menu and learn all about the story behind the restaurant.
Zilio’s is located at 10367 S. State Street in Sandy, UT and it shares the same building as Pei Wei and Rumbi. If you aren’t familiar with that area they are also right by South Town Mall, Nordstrom Rack and just up the street is Megaplex Theaters. So they are the perfect place to grab a quick lunch during a girls shopping trip or to grab dinner right before your movie on a date night.
While I was looking over the menu, Titan and Broc spent some time reading about the story behind the name of the restaurant. You can read the full story on the Zilio’s site or just read it as you walk in the next time you visit. Because you are going to want to visit! 🙂
My favorite “pizza fact’ was that when pizza first came to the United States, most people couldn’t afford a whole pizza, or even a slice for that matter. So they would pay for a chew instead, meaning one bite. Can you even imagine? Just taking one bit and then passing it along? So glad that’s not still a common practice.. 😉
We also learned that Pizza Margherita was named after Queen Margherita of Savoy and it was created to resemble the colors of the Italian flag. The tomato is the red, the mozzarella is the white and the green is the basil. Kind of fun! I knew those were the ingredients on the pizza of course, but I didn’t know that they were supposed to resemble the Italian flag. Or that the pizza was named after and created for the queen.

After learning a little about the history of pizza and the story behind the restaurant it was time to test out their menu. I have to admit, before we arrived I looked at their menu online and after looking at their prices, I assumed that everything must be by the slice. I mean, there’s no way that for only $6.50 you are getting a whole lot more than that, right?! Come to find out for only $6.50 you actually get a whole 10 inch pizza or a huge salad!
Looking over the menu we had a hard time narrowing our choices down. Everything sounded good. From the calzones and the pizzas to the breadsticks and the salads!
In the end we ordered the Pear & Blue Cheese Salad, the Strawberry Spinach Summer Salad, the Veggie Calzone, the Meatlovers Calzone, the Calabrese Pizza, the Pear Pie Pizza and the Blueberry Crumble Pizza. And of course, Titan tried out their Kids Cheese Pizza! (I realize that’s A LOT of food for four people but we wanted to make sure we tried a variety of things so I could tell you all about them…and we did go home with some leftovers!)
While we were waiting for our food we spent a little bit of time looking around the restaurant and talking with the owner. I thought we would be waiting quite a while for our food. I mean, we ordered two calzones and three different pizzas. To my surprise though, all the food started coming out in under 5 minutes. (Other than our dessert pizza of course which they waited to cook and brought out towards the end of our meal.) I guess that is thanks to some awesome ovens they have!
We were told that a lot of people come in and are as surprised as we were that the wait times are so short. In fact, they get told quite often that people would have come in sooner on their lunch break, with their kids, with their co-workers, etc. they just figured with it being pizza, they wouldn’t have time.  So now you know! Zilio’s is a fast service restaurant with awesome quality food!
Speaking of the food…here are some photo’s of our dishes! This is the Strawberry Spinach Summer Salad. (And this is the half salad for only $4.75!)
Check out those strawberries! (I have seriously been craving this salad ever since we left!)
You know you’ve hit the jackpot when your child is reaching across the table to taste test your salad! 🙂
Here is the Calabrese Pizza.

The Pear Pie Pizza!
The Blueberry Crumble Dessert Pizza!

And, here is one of the calzones! (Everyone started digging in to the food so fast, I didn’t get a picture of the other one. LOL)

Of course I was VERY happy to see that they serve Coke products. You all know me and my preference for Diet Coke. 😉
I asked Titan what he thought of the place and he gave it a thumbs up. He especially enjoyed sharing our salads and said the cheese pizza was good too. Always nice to know we’ve found a place that’s mom and kid approved! (And to find salads that our child will eat!)
In fact, he was too busy enjoying the food to really take a good picture! LOL

Out of all the food I would have to say that the Pear Pie Pizza, the Veggie Calzone and the Strawberry Spinach Summer Salad were my favorites. I liked the other things I tried, but those were definitely the stand outs in my opinion. So when you go, make sure to try one of those!

The strawberry salad was really fresh, light and filled with lots of yummy fruit & the Pear Pie was ridiculously good as well. Plus, how often can you say you’ve had pears on your pizza? And that you only paid $6.50 for that pizza?? Talk about a great deal!

Overall we we really impressed with the atmosphere, the staff, and the freshness & overall quality of the ingredients that were used. Especially for the price!

Ready for some really good news? Zilio’s has offered to give one Live to be Inspired reader a $25.00 gift card to Zilio’s! How nice is that?!
So, if you are wanting to try out their Pear Pie Pizza or Blueberry Crumble Dessert Pizza for yourself, make sure to get entered!
Good luck!

A while ago I got the sweetest message from my sister-in-law asking if she and my sister could throw Baby Girl Parker a Baby Shower while we were in Utah! I wasn’t expecting any showers for baby #2 and so I was definitely touched by their thoughtfulness!
Here are photo’s from the night:
The food! 🙂

Some of the decor….check out those adorable drink cups! (Such a cute idea!)

One of the centerpieces.

Balloons… and a belly bump if you look close enough. LOL

At the end of the night with my mom, my sister and my two sisters-in-law.
The gorgeous orchid from Costco that I was sent home with. (You better believe I dragged that orchid all the way home to Colorado with us!)

I realized after the shower that other than the decor and the one group shot at the end as we were cleaning up that I didn’t get any photos of the whole group or of the gifts. We are all too busy talking and having fun.
Here is a photo of some of the stuff from when I was unpacking at home. Baby Girl definitely got spoiled! 🙂 I can’t wait until she is finally here and can wear and use all the adorable things people gave her.

Last but not least, one of my favorite parts of the night was opening a gift from my Grandpa Kimball’s wife, Christa. She told me before hand that my grandpa had found some crocheted bibs and a blanket and that he wanted me to have them. He figured they were my Grandma Kimball’s (who passed away a few years ago) and she would want me to have them. Come to find out when I opened them, they were actually crocheted by my mom over 20 years ago and my grandma bought them from her to give as baby gifts. So it was like getting a gift from both my mom and my Grandma Kimball! So excited to have these bibs and the blanket for Baby Girl Parker! She is one very loved little girl already!! 🙂

It’s April 1st! Can you believe it? I guess that means it’s time to do our March in review post!

In March…
I was out running errands and I hit up against a curb and got a flat tire. (I honestly could not believe that was all it took for my tire to flatten like a pancake?!) I called Broc to see if he could come change it and he said, “Can’t you change it? That’s in your skill set, right? I think there is  a spare in the trunk”.
What I wanted to say was, “Well honey, as a matter of fact, yes. It is indeed in my skill set. I’m pregnant though, it’s starting to rain/snow and you are less than 5 minutes away. So get your behind over here.” Instead I just told him I didn’t know how to do it and later confessed that I actually do. So grateful he was close by and made his way over even though he didn’t really want to.
In the end we had to purchase four brand new tires for the car which is so not a fun bill to pay! If a tire pops that easily though, I guess it’s time to get some new ones put on. Plus, with the road trip this car has to make to Pennsylvania in a few months…better safe than sorry, right?!

We did LOTS of spring cleaning…and still have LOTS more to do! (All of the above bags went to the Salvation Army one night.) There’s just something about knowing you are moving across that country that seriously makes you assess and re-assess each and every single item that you own! LOL

As part of my deep cleaning I also tried out a new method for cleaning Titan’s toys. I put them in the dishwasher with some vinegar on the bottom and then just ran a regular cycle. Um, SO much easier than trying to wash and sanitize all the toys by hand! These were some of his bath toys and I think his Duplo Legos will be my next load.

We had a banana split and Yahtzee game night!

Titan found our Yahtzee game and wanted to give it a try. So while I made the banana splits, Broc taught him how to play. Titan was a little concerned when he saw on the box that it says for players age 8 and up. We convinced him it would be fine, and sure enough, it didn’t take him long to catch on.

The baby bump arrived!
Our baby girl is growing healthy and strong and finally growing outward as opposed to trying to take up every square inch of space everywhere else. It was definitely about time considering this was taken at 24 weeks. (And, yes. I know our bathroom is in need of a good deep cleaning…) 🙂

We went on some walks to Hobby Lobby.

And, we spent a night at the Lifetime Indoor Pool! I am definitely going to miss Lifetime when we move to PA. We love our family time at the gym!

In fact, this is the face I get when I announce it’s time to leave.

…and then he pouts by the wall.

Luckily, telling him we were grabbing pizza and some movies on the way home helped get him out. We tried out Marco’s for the first time and really liked it. It’s definitely on my list of places to visit again before we move!

After stopping for pizza, we grabbed some treats and movies at Redbox to finish the night as a movie night! I love nights at home with my boys.

Another day in March we made a super random trip to Walmart to look for some shoes I saw on Instagram and so Titan could ride in the “helmet”.
I asked Titan to make a list of all of the things in Colorado he wanted to do once more before we move and this helmet  ride made the list. Seriously?!? Luckily it’s only $0.50 and I did want to check for the shoes…(Which, by the way, were never found in their horribly organized shoe section!)
Of course, once we were there I immediately remembered why we NEVER go there. Other than Ti Guy’s beloved helmet ride…so. not. worth. it! I’ll stick to Target, Kings and Costco! 🙂
In fact, we go there so little, this was Titan was we were pulling up – “Mom. Look! It’s the place with the helmet. That place with the sun type thing in it’s logo.” – He couldn’t even remember the name for Walmart. LOL

The little man “people watching” at Walmart.

Another day we made a trip out to Fort Carson for some eye appointments on base. While we were there we decided to grab lunch on base and ended up walking past a Game Stop store. Which, naturally, we just HAD to go in! I was standing there looking at Ti check out the Wii U section and between the hoody, flip flops and his conversation – I had a hard time remembering I was talking to my 5 year old. When did he get SO big??? He’s 5 going on 15 I tell ya! 😉

Love this little man!

Here’s Titan “helping” me with my Biostatistics homework. We had a very in-depth and serious research question all worked out for our group project for the final in the class. But, then we were told that we needed to make it easier. So, counting M&M’s it was. In case you were wondering, there are on average 17 M&M’s in each Fun Size pack. Of course some bags had as few as 13 and some had as many as 27!

After a late night of homework and packing it was off to Utah for Spring Break! Someone was excited to be on the road… 🙂

As soon as we got into town we headed to my brother’s house for a Frozen Birthday Party for his two girls. The Scandinavian themed food for dinner and the decor were SO cute!

At the end of the party my brother passed out all of the pin lanyards he had put together for everyone for our Disney World trip in May. Broc and I opted out of the pin trading but we were glad we got a set for Titan to have fun with. He is already becoming quite the pin trading master. Plus, he was asking everyone else what they plan to trade for so he can help them find what they want. Amazing what he fits into his memory!

Let the pin trading begin!

Titan trading with Uncle Conner. Between all the trading the kids were already doing at the party, I can tell they are going to have a lot of fun with it when they are actually in the parks at Disney World!

Another fun thing we did that night was fill out some March Madness brackets for the rides/events at Disneyland and Disney World. My brother is a HUGE Disney fan (and that’s putting it mildly) and it was funny to see that other than one ride, Titan’s filled out sheet was identical to my brother’s! These two are so a like it’s scary some times! So grateful Ti has such fun uncles though!

When we weren’t eating or playing – I did try to start fitting in some workouts. I took this Lindsey Brin Prengnacy 3-Pack video set with me to Utah on our trip but I only ended up doing it once. Between all the stairs I was doing at my mom’s house and all the walking I was doing on the days I was at BYU or shopping at the outlets, I felt like I was getting plenty of movement in.

Speaking of all the eating we were doing, I went with my sister to the new 5 Star BBQ that just opened in Orem after hearing it was a lot like Rudy’s here in Colorado. While the concept is similar and the food was good – I will stick with our Rudy’s. (The prices at Rudy’s are much better and their cream corn is better as well!)

It was fun though to try out a new place and to have a lunch with my sister before my test at BYU. It’s not often we are able to get together without all of our kids.
While we were in Utah I had to take one test for my Human Anatomy class and so it was off to BYU to have it proctored. Not going to lie, a little annoyed that BYU charged me to proctor a BYU-I test! I mean, come on! The campus was really pretty though and the weather was amazing and so I didn’t mind having to be on campus and outside.

After my test, I did stopped by the Ross in Orem to take a quick look at their maternity section (more on that in another post) and then we dropped off Titan at my brother and sister-in-law’s and went to see Divergent with my mom. I just barely read the book while we were on our cruise in January and so it was fun to see the movie so soon after. I really liked the movie and am excited now to to read the second book!

Another item on our To Do list for while we were in Utah was shopping at Seagull Book and Deseret Book. We don’t have either of those in Colorado Springs and that’s where I like to do all of my Easter shopping for the little man. So I made sure to hit them up during our visit and avoided having to pay shipping online later this month. (Note to self for the future: Don’t try to go on a Monday night after 7PM. Both stores will be closed!)

I ended up being able to find some really cute things and even came across a game Titan has been asking for. YAY! (More about that in a later post as well!)

One thing my mom and I like to do whenever I visit is stop in an Olive Garden for lunch. It’s the only time either of us really go. While we were there this time they introduced their new lunch menu to us and all I can say is. “It’s about time!” 🙂 I’m not sure about all locations, but at the one in Sandy you can now get the soup, salad and breadsticks for $6.99. And if you want, you can add on a pasta or other small entree for only $2.99 more. Such a great idea!

Gelato!
Another night in Utah we took Titan to see The LEGO Movie and we grabbed some gelato before hand in the food court at Jordan Commons. I love their Almond Joy and their Raspberry! Both are SO YUMMY!

PS: If you haven’t seen The LEGO Movie yet, it is actually really cute. It has great messages through out and was nothing like I was expecting. (I’ll admit I had REALLY low expectations!) Definitely a good movie for the whole family and one we will be purchasing when it releases on DVD and Blu-ray.

Hair appointments with Aunt Brooke at Amber Renae Salon. Titan asked for a picture and then took four photos all similar to this – really? 🙂 At least his hair is decently cut now.  We are so sad we won’t be able to get haircuts as often from Brooke now that we will be moving to PA!

Another favorite Utah meal. 🙂 I wanted to visit H&M and my mom had a return at Fashion Place Mall, so we made a night out of it. H&M ended up being a disappointment but we were able to get Hot Dog on a Stick for me and Panda and some Mrs. Fields Cookies for Titan. (I guess that’s tradition when we are in Utah and with Grandma Cindy…at least according to Titan.)

Our last day in Utah I went to a baby shower for my cousin and then I spent the rest of the day shopping with my mom and sisters. We went to the Traverse Mountain Outlets, Cafe Rio and Ross.(My younger sister works at Ross and we definitely LOVE when we can take advantage of her discount.)
While we were shopping we came across this display at Motherhood Maternity and my sister said, “Look it’s your color palette. And they are all Buy 1, Get 1 50% Off. Buy one of each and you will be set for Disney World.”
Truthfully, she wasn’t too far off with saying that’s my color palette. Apparently I am pretty set in my ways when it comes to what colors and types of clothes I wear…and I guess that same color palette is already showing up in our daughter’s wardrobe! 🙂

Last but not least, you can tell you’ve had a good trip trip when you have been in the car on your way back home for less than 20 minutes and your child is out cold! I guess we wore the little man out… 😉
We definitely enjoyed our time in Utah and are glad we went there for Spring Break! We were able to spend lots of time with family and go through most of our stuff in storage. That part wasn’t so fun but I made it more enjoyable with a Coconut Caffeine Free DC (or a few Coconut DC’s) from the local gas station. Best discovery ever! I think every gas station should have the syrup add-ins now! Plus, it was really nice that my mom and Broc’s dad helped us out a lot loading trailers, moving boxes, organizing, etc. Definitely made the process go faster!
What did all of you do for Spring Break?? Did you stay home and have a “staycation” or travel somewhere fun?
