something to talk about ~ week 7

my something to talk about this week is actually two things: first another puree recipe (as promised last week) and second an idea to bring more peace into your home. for those of you looking for the super saturday tutorials, don’t you worry those will be up tonight…or at the latest tomorrow morning. i need to figure out a scanner before i can reveal those. silly technology.

 macaroni and cheese with a twist!

ingredients:

1 1/2 cups elbow macaroni
nonstick cooking spray
1 tbls. olive oil
1 tbls. all purpose flour
1/2 cup skim milk
1/2 cup butternut or cauliflower puree (i used cauliflower this time)
1 1/2 cups shredded cheddar cheese
4 ounces cream cheese
1/2 tsp. salt
1/8 tsp. paprika (i actually left this out)
1/8 tsp. pepper

directions:

cook your macaroni according to directions and drain. while macaroni is cooking, coat a large saucepan with nonstick cooking spray and heat over medium heat. add the oil, then the flour, and cook, stirring constantly, until the mixture resembles a thick paste but has not browned. about 1 to 2 minutes.

add the milk and cook, stirring ever now and then, until the mixture begins to thicken, 3 to 4 minutes. add the vegetable puree, cheddar, cream cheese and seasonings, and stir until the cheese is melted and the sauce is smooth. stir in macaroni and serve warm.

i love that these recipes allow me to sneak some veggies into my son’s diet. over the last month or so he’s turned from someone who’ll eat anything, to a very picky eater. i’m hoping it’s just a phase, but until the phase ends i’ll be pureeing up a storm. this recipe was also from the book deceptively delicious, just in case you’re wondering. all my puree recipes for the next while will be from that book.

…and last but not least for something to talk about, i came across a blog called women living well a while ago and loved some suggestions the author, courtney, gave for bringing more peace and harmony in your home.

1. go buy a large candle and light it in your home every day & when you notice the candle throughout the day stop and say a prayer for peace in your home.

2. play soft music in your home.

3. add some tender moments with your family to your schedule. spend quality time together.

4. focus on the kitchen, the heart of the home. cook things with a pleasant aroma, make a big deal about family dinner.

the main thing on this list that stood out to me is actually #1. lighting a large candle and praying for peace in your home when you see it. i have actually lit a candle almost every day since i read this and try to say a little prayer when i see it. if nothing else, i know that this little ritual helps calm me down and remind me of what my goal is for my home. it’s great reminder of one of my priorities throughout the day. i also have been trying to implement more soft music into our routine as well. the past few weeks i have especially tried to focus on playing church music or calming instrumental music while we are getting ready on sundays and throughout the day on sunday.

i thought i would share these tips today because it seems that this week is the beginning of what can be insane holiday chaos for the next 6-7 weeks and i think it is so so important that our homes are a place of peace, love & harmony. that they are a refuge to come home to a night. do they need to be perfect and white glove worthy 24/7? definitely not, but we should be trying to foster a positive & happy environment all the time.

wow! what a weekend. i think i’m still in a little bit of a sugar coma! how about all of you? have you recovered yet from the whirlwind of trick or treaters that haunted your doorstep last night? my little man loved hearing the door bell ring and would race to hand out the treats. by the end of the night he was a candy giving pro. he’d even send them away with a big wave and a “byyyyeee”. at one point he was standing with a fistful of candy in each hand on the doorstep yelling “candy here. got candy”. yes, i dare say it was hard not to see that we were home last night. such a cute little candy advertiser. i think he’s caught the halloween bug, and i absolutely love it!

as for the rest of our halloween activities i’ll have to post those tomorrow because right now it’s time for something to talk about, week 4…

my something to talk about is actually a status that has been circulating facebook:



I’ve carried a child within my body. I’ve slept with a baby on my chest. I
have kissed boo boos, mended broken hearts, been puked and peed on, and
spent sleepless nights in a rocking chair. But I wouldn’t have it any
other way. My body isn’t magazine perfect but when I look in the
mirror, I see a mom and there is no greater honor or blessing. Make
this your status if you are proud to be a Mom!



i read this earlier this week and loved it because i have carried a child within my body. i have been puked on and peed on by said child & my body is definitely not magazine perfect, but that is all okay because i am a mother. i am a mom to one incredible little man.


i must admit almost daily i look at this perfect little human being running around in absolute awe. i can’t believe that i created him, that if it were not for me, he wouldn’t exist. i am speechless & amazed that i carried him for 9 months, that i delivered him and that my body did it all practically seamlessly. i can 100% say i loved the whole process and would do it another ten times. 


it literally makes me stop every time i am in this moment of complete amazement and give a prayer of thanks for my body and for all that it can do, stretch marks and all. being able to carry and give birth to a child is the most amazing, strange & incredible experience ever & i wouldn’t trade it for anything. 


so my plea to all mother’s out there is rather than stressing out over your jiggly arms, give thanks that those arms daily lift, hug and wipe “nacks” from your little one’s mouth. rather than worrying about potential thunder thighs, give your legs credit for how many times a day they chase your small one around the house. rather than stressing over your stretch marks, give your body credit for carrying and giving birth to the miracle that is your child. yes, we should strive to be healthy and active, but there is a difference between striving to be our best self and freaking out over what we perceive as the negative. do what you can & forget the rest. focus and work toward the positive & eliminate the negative. 


the way i see it if our bodies were supposed to always stay like they were when we were in our teens, we wouldn’t have been given the incredible gift of being able to bear children. do i sometimes look at people my age who haven’t had children and their “better” bodies and get a twinge of envy? yes, i do. i wouldn’t be human if i didn’t. the second my little man curls up in my arms though, i feel totally different. absolutely nothing can compare to being a mother & having the experience i’ve had the last almost two years & nine months. nothing. i’ll take stretch marks and a little extra tummy any day since it means i get to spend the rest of my life as ti guy’s mom. there is no greater calling or title in the world in as far as i’m concerned.

happy monday everyone! my something to talk about this week is actually a new found favorite recipe. the first weekend we were here in colorado, some friends of my in-laws invited the entire family over for breakfast on a sunday morning. it was at this breakfast that we were all introduced to…

hawaiian french toast

i’m telling you this recipe is so ridiculously delicious, it’s insane! it’s literally melt in your mouth good, and the best thing is, it’s not a whole lot harder than regular french toast. i must say, it definitely falls into the “not so healthy, but that’s what makes it so good” category so your taste buds will definitely thank me, but you scale may not. of course, you’ll be in such a food coma you won’t care. it’s. that. good!





hawaiian french toast recipe

batter:
1 banana, mashed
1 cup milk
3 large eggs, beaten
2 tbsp. honey
pinch of salt

whisk together the above. dip bread into batter. flip over to coat the other side. fry over medium heat until center is done. then pour coconut syrup over french toast.
what makes it so fabulous, in my opinion!

coconut syrup:

1/2 cup butter (1 stick)
1 cup sugar
1/2 cup buttermilk or sour milk *
1/2 to 1 tsp. coconut extract (i always use the full amount)
1/2 tsp. baking soda

the syrup in all it’s ooey, gooey & buttery goodness

melt butter and sugar together over medium heat. stir often until it starts to thicken. add buttermilk and stir until it starts to slowly bubble up again. remove from heat and add coconut extract and baking soda. stir. replace syrup on low warm heat until ready to use. side note: make sure to cook in a medium/large pot because it does get rather frothy and foamy and you don’t want it to spill over! **

*if you don’t have buttermilk, add 1 1/2 tsp lemon juice to 1/2 cup milk. stir and let sit for a few minutes. then add to mixture.
**confession time: one morning i was in a hurry and literally just dumped all the ingredients for the syrup in the pot together and then brought it all to a boil just until the butter was melted, and it turned out pretty close to the same. so if you’re in a hurry, just pour it all in and heat (although, you really should try to do it as directed above at least the first time!) 🙂
