second, if i had to give myself a grade for month numero uno of healthy living 2010, i would have to give myself a “c+” for the following reasons:
  • i have been awful at posting on the things i’ve been doing in regards to increasing my water intake and in ship shaping up the little man’s food. the last post was back in the beginning of april. yikes!
  • my water intake has not improved hardly at all. i blame this on two things, being out of town for almost two weeks on vacation (i’m not giving up my diet coke on vacation) & habit. although to give myself some credit, i did have water ever night at dinner on the cruise. i didn’t even order a diet. i just ordered water and i drank at least 2-3 glasses during dinner. so that gets a tinsy eensy bit of credit. 
  • and lastly i realized as i tried to make-over my little man’s food that it wasn’t going to work until i first made-over what broc and i eat. duh! the little man wants to eat what we are eating. it does positively no good to hand him a bowl of yummy maple and brown sugar oatmeal with wheat germ, flax seed, and kelp added to make it super oatmeal while i sit there eating a cookie. (the truth is ugly!) 

yes, who was i kidding thinking my son would eat all the healthy organic food i was serving him while i sat there with my diet coke and cookie? can i say massive hypocrite!!! on a positive note, he is completely switched over to whole milk and 100% off formula! (i know the books say 12 months is the deadline, but i don’t ever really follow parenting books) and he is almost completely transitioned himself to a sippy cup all on his own. i just can’t be the mom who rips the bottle away from her kid and lets him scream over it for 2-3 days. it’s a bottle. if you see my son with his and it bother’s you, just look the other way. he’ll probably have it until he’s two or three. same with his binkie. 
i digress though, back to healthy living. as you have read i didn’t do so hot in april. may has begun though and i’m all pumped and ready to start fresh. i’m not forgetting about my water and my little man’s diet, nope, i’m carrying it over into this month. 
may is eating at home and recipe organization and i am hitting the ground running this time! 
i went through my cupboards on friday night to assess what i already have and made a grocery run yesterday so we can start this month off right. starting tomorrow (my birthday!) i’ll have more frequent posts about how i’m doing on everything this month – this time i pinky swear! so tune in tomorrow! 
ps. here is what was in store for those strawberries. the little man adores strawberries, so i’ve started washing them and cutting them up as soon as i bring them home from the store, then storing them in the refrigerator. that way they are all ready to go when it’s meal time. i also like to do this with watermelon, cantaloupe, and any other fresh fruits i bring home that he might enjoy. this way they get eaten quicker and we don’t waste them.

water. i know i need it. i know i should drink it. yet, i rarely do. it’s true. i’m lucky if i drink 16 oz in a day. somedays i may not even drink any. i often joke that diet coke is my water, because don’t you worry i almost always get at least 32 – 44 oz. of diet coke in each and every day. i have my priorities all worked out. um. not.

my story is that i just don’t like the taste unless it’s super hot outside or i’ve just gotten down with a hard workout, then i can guzzle it down like the best of them. those two times are about the only times water seems refreshing or appealing to me though. otherwise it’s hard to force down the suggested 8 – 10 glasses a day. the other day i was so proud of myself because i got 4 full 8 oz. glasses of water in. hooray for me. i was literally texting my husband saying “yeah me”. then i realized how pathetic that really was. only 4? when the suggested amount is 8? and the 4 was painful. 4 more? it didn’t happen. i stopped. i know. i know. it’s just water. i need to suck it up and just drink it. my pity party over having to drink water is ridiculous. i’m not denying that at all. i mean the reasons to drink water and why we should drink water are incredible. i found the following today (i googled “why the heck is water so important?” and this was in the results):

april 01, 2010 has arrived and with it the beginning of my new project. a brain storm that has been brewing over my head for a week or so now, is about to pour. and i hope it pours hard. i hope it’s a downpour. 
i’ve spent time thinking, pondering, & dwelling on the idea for a little over a week now and although my inner dialogue is telling me, “no. wait. you need to do more research. you need to wait until your back in town, you need to wait until you have a more creative project name, you need to wait until you have your own kitchen. blah. blah. blah.” i am choosing to ignore the “perfect me” voice battling inside my head and just dive into the deep end. 
funny thing is, this is not a serious project. it is not one that requires perfection. for pete’s sake it’s even a project where planning is built into it – that’s the beauty of it really. i have no excuse not to begin, because i can plan later, i have planned time to plan (my mind is a scary place at times – be warned. i mean who needs to plan to plan? twisted isn’t it?) 
so what is this project? drum roll please….da da da da (insert trumpets here)

for the next 12 months i will spend each month, all month, focused on a specific area of interest in regards to food, budgeting for food, planning for food, anything to do with food and managing a kitchen basically.
 i have selected 12 categories and have assigned each category a month between now and april 2011. 
the monthly categories are as follows: 
april: the little man’s food & H20
may: eating at home & recipe organization
june: budgeting & money saving 
july: fruits, veggies & puree’s
august: cooking from scratch and substitutions
september: food storage/stock piling
october: grains & proteins
november: freezer & crock pot meals
december: creating the atmosphere 
january: organics
february: cooking from food storage
march: growing in the garden
each month i will focus solely on researching and putting into action any improvements i want to make to our lifestyle that fall under the specific category assigned. that’s it. that’s the plan. of course there may be some overlapping and i may make a crock pot meal or two before november or start budgeting before june. the method to my madness though is this breaks down everything i see we need improvement on and makes it more manageable to my type a mind that wants to do everything at once, immediately, and perfectly – which isn’t humanly possible and, of course, since i know this isn’t humanly possible my safety zone in the past has just been to do absolutely nothing. look the other way. ignore that i haven’t eaten a fruit or veggie in a month. i tell myself i’m an all or nothing person which gives me an excuse to do nothing. that is not going to be true anymore. i am not an all or nothing person. i don’t have to be perfect. i just need to do my best and let what happens happen. 
this way, i can happen to read something about puree’s, even get excited about puree’s, but remind myself that they can wait until july. for now all i need to be perfect at or focused on is consuming more aqua and my little man’s food intake. that’s it. puree’s can be filed away until their own special month where it will be nothing but puree’s for 30 days straight. my hope is that each month i will get better in each area and over time all the areas will begin to overlap and blend as new ways of eating and being are formed. then at the end of a years time we will have experienced a total overhaul of our eating habits but without feeling totally stressed and overwhelmed. 
each month i will document my research and projects here. all the details (good and bad) will be posted.
i hope some of you (or a lot of you) will join me in this undertaking. i’d love to share insights, inspirations and ideas. get a forum of sorts going. the fun all begins right now. today. no waiting. no procrastinating.

ps – this is how i am envisioning my fridge looking like at the end of the year. all pristine and perfect. totally organized. crisp clear containers. a shelf for everything and everything on it’s shelf. it’s pure fridge heaven in my book. just look at the containers of spa water and fresh herbs? think of feasting your eyes upon a site like this as you begin breakfast each and every morning, i may be weird, but i find it extremely calming. yes. this is my hoped for end result. i want all other fridge’s to be envious of my utterly fabulous fridge. it’s true.
