hawaiian french toast

i’m telling you this recipe is so ridiculously delicious, it’s insane! it’s literally melt in your mouth good, and the best thing is, it’s not a whole lot harder than regular french toast. i must say, it definitely falls into the “not so healthy, but that’s what makes it so good” category so your taste buds will definitely thank me, but you scale may not. of course, you’ll be in such a food coma you won’t care. it’s. that. good!





hawaiian french toast recipe

batter:
1 banana, mashed
1 cup milk
3 large eggs, beaten
2 tbsp. honey
pinch of salt

whisk together the above. dip bread into batter. flip over to coat the other side. fry over medium heat until center is done. then pour coconut syrup over french toast.
what makes it so fabulous, in my opinion!

coconut syrup:

1/2 cup butter (1 stick)
1 cup sugar
1/2 cup buttermilk or sour milk *
1/2 to 1 tsp. coconut extract (i always use the full amount)
1/2 tsp. baking soda

the syrup in all it’s ooey, gooey & buttery goodness

melt butter and sugar together over medium heat. stir often until it starts to thicken. add buttermilk and stir until it starts to slowly bubble up again. remove from heat and add coconut extract and baking soda. stir. replace syrup on low warm heat until ready to use. side note: make sure to cook in a medium/large pot because it does get rather frothy and foamy and you don’t want it to spill over! **

*if you don’t have buttermilk, add 1 1/2 tsp lemon juice to 1/2 cup milk. stir and let sit for a few minutes. then add to mixture.
**confession time: one morning i was in a hurry and literally just dumped all the ingredients for the syrup in the pot together and then brought it all to a boil just until the butter was melted, and it turned out pretty close to the same. so if you’re in a hurry, just pour it all in and heat (although, you really should try to do it as directed above at least the first time!) 🙂
