i can’t believe it’s the last weekend in october, that halloween is this sunday! i had so many plans for this month, some i was able to check off the list, like our visit to the pumpkin patch, but other’s i guess will have to be tucked away for next year. 
this last weekend i decided to get busy in the kitchen and tried out a few new fall recipes. some like the one i’ll be sharing today were a success. other’s like my first attempt at homemade fruit roll ups and my try at healthy pumpkin cookies were not such a success. i guess 1 out of 3 isn’t bad! lol 
apparently my fruit roll ups were not thick enough & i shouldn’t have used wax paper beneath them? has anyone successfully made them out there in an oven? if so please tell me your secrets! must admit, am definitely excited to try them again though, now that i’ve done even more research on the matter because what was edible, was super delicious!
…and what went wrong with the cookies? well, nothing really. they turned out, they just tasted super healthy to us junk food addicts. for a “healthy” cookie they weren’t bad, but let’s just say i won’t be delivering them around to the neighbors, because unlike the title they did indeed taste… healthy. i think they require an acquired taste. you know, a palate that hasn’t been snacking on the latest delivery of processed halloween candy and diet coke, in order for them to satisfy any type of sweet tooth craving? 🙂 if you have such a palate and would like to try them you can go here. i will probably try the recipe again, but think i’ll definitely add in more pumpkin and more chocolate chips, see if that helps at all! (and i wonder why i can’t get to my goal weight yet…)
now onto the successful events of the weekend…
while i was busy cooking i gave ti the task of coloring some spooky pages. i’ve decided we need to do this activity more, it kept him entertained for a very long time.

these were delivered for my mother-in-laws birthday after she had left to go out of town for 10 days, so broc and i got to enjoy them all week instead. love the color of these! so fun to look at while cooking.
so what was my successful recipe? 
cookie ghosts! 
ie. nutterbutters dipped in white chocolate. i found the recipe last year after halloween over at martawrites and filed it away for a tasty treat this year. will be delivering them to some neighborhood gals this week. the only change i made to marta’s recipe is that i didn’t use the double broiler method (well i tried that first, but failed) so then i just microwaved small amounts of the white chocolate. made the process much easier and quicker in my opinion. 
step one: line up your nutterbutters on wax paper

step two: dip them in melted white chocolate ( i used hershey’s)
step three: use two mini chocolate chips to make the eyes
step four: package them up for delivery

the tag also ended up being from marta’s blog. it’s a download you can purchase for $2 this month, and then print out to use however you’d like. originally i had my own tags whipped up on the computer but between the three computers and two printers in this house, i couldn’t get them to work. figure that one out…. luckily, marta saved the day with the super cute download that reads:

the paper is just regular printer paper in orange, the damask skeleton bags i bought at michael’s a month ago with a 40% off coupon and the ribbon is from walmart (just your basic curling ribbon). 
…and there you have it, a super easy, tasty and cute treat to drop off to some friends or neighbors. that is if you can stop yourself from eating all of them first. enjoy!

    i love the little ghost cookies! I keep telling myself I should do neighbor gifts for holidays, because I think they are so fun…and then I don&#39;t, for one reason or another.(maybe more one excuse or another?) either way, that&#39;s a super cute idea.<br /><br />and you should try painting with Ti too…I just introduced Luke to it recently and he loves it! And the little water color paint

    I bet he would love that! Thanks for the idea. 🙂 I&#39;ve been vowing I&#39;ll do more art type projects with him…but then never do. Washable paint sounds perfect! 🙂
