happy first day of summer! i hope everyone had an enjoyable weekend and got to spend time with their dad’s yesterday. it was a slightly downer day around here because broc is still out of town. talking to him on the phone just didn’t do it. thankfully he’ll be home in 4 days and we can celebrate then.

i was able to spend time though with my dad and with my in-laws. so overall it was a good day. just would have been a fabulous day if broc weren’t across the united states somewhere else.

after this post i plan on doing nothing today other than playing with my little man and spending some time at the pool in celebration of the true first day of summer. looking at the weather report for the week brought a smile to my face, 80’s and sunshine ALL week long! there is even one day that hits the 90’s. heaven!

before i head to the pool though i want to share with you the food that was planned for the bridal shower. when i first began planning the food we were going to do cafe rio pork salads with the tomatillo dressing, fruit arrangements from a local place called edible arrangements, and homemade cupcakes and brownies for dessert.

upon doing a trial run of the cafe rio pork salad recipes about a month before the shower though (as it’s always a good idea to try out new recipes in advance) i found out it was going to be way too expensive for my small budget. the pork alone was going to cost an arm and a leg for a large group of people. so although the recipe was so so yummy. yummy enough that i, who don’t like pork, loved it. i had to change course and do a more simple & cost effective meal plan.

the pork and dressing recipes can be found here though for any of you wanting to try them. i’m not kidding you, these recipes were incredible. they have definitely made it to our top ten list. their only drawback is they are rather pricey. between the pork and it’s ingredients, the dressing, and then all the extras (tortilla’s, chips, black beans, rice, etc.) that go into the salad it was going to cost way more than my budget for the shower. would be a great dinner idea for a large group where everyone is in charge of bringing something, as that would spread the cost around.

so what did i change to? i went to the trusted standby of chicken salad croissants. not my first choice, as they are overdone in my opinion at events, but they are easy and cost effective for a large group.

this is the recipe i decided to use for the chicken salad. although i did make some changes which are noted below. the changes i made will be in italics.

chicken salad croissants

prep: 15 min. (if everything is already sliced and diced!), chill: 30 min. tarragon adds a fresh flair to this southern favorite. ff desired, prepare the chicken salad two days ahead, and then assemble the sandwiches the morning of the party.

yield: makes 20 sandwiches (with costco croissants this number is less. i tripled the recipe and it made maybe 30-35 croissants so i would plan on only about 10-12 croissants per batch, not 20 if using costco croissants)

ingredients
1 cup mayonnaise
1 cup sour cream
1 teaspoon salt
1 teaspoon pepper
1/4 to 1/2 tsp. fresh tarragon (1/4 is the amount i used)
3 cups chopped cooked chicken (i bought the canned shredded chicken from costco, make sure to drain really, really well)
1 cup seedless green or red grapes (i halved my grapes)
3/4 cup pecans, toasted and coarsely chopped (i only used about 1/4 cup of pecans maybe slightly more, otherwise it’s really really nutty)
20 croissants
red leaf lettuce (i used green leaf)
fresh tarragon sprigs (skipped these)

preparation
1. stir together mayonnaise and next 4 ingredients in a large bowl. add chicken, grapes, and chopped pecans, tossing to coat. cover and chill at least 30 minutes.

2. cut a slit horizontally on 1 side of each croissant; fill evenly with lettuce and chicken salad. skewer sandwiches with fresh tarragon sprigs to hold together.

the result? they were scrumptious. everyone loved them and i have also added this recipe to my favorites list. it was the perfect combination of ingredients. the celery, grapes, and nuts made it a fantastic & light tasting summer dinner. yes, these are overdone, but i guess i now understand why! they were super easy to make and serve to our group of about 20-24 guests.

a couple tricks and tips:

  • my sister got me a pampered chef chopper for christmas that i busted out and used on this recipe. go buy one immediately. it was so helpful with this recipe and cut the prep time in half, if not more. it worked great for the celery and grapes. i promise you, you need this tool in your kitchen. you will use it on so many recipes.
  • while preparing the salad i had the thought to leave the nuts out of a small portion in case someone was allergic to nuts, of course i then ignored that thought and proceeded to add nuts to the entire batch. come to find out brooke’s roommate is allergic to nuts and couldn’t eat the croissants at the shower. ALWAYS listen to your inner voice & do what it says. in fact, when preparing anything with nuts for a large group of people, it’s probably best to leave the nuts out of at least 1-2 servings, just in case. it just doesn’t hurt to be prepared.

  • buy your croissants from costco. they really are the best.
  • utilize other people. there is no way i could have done all the food for the shower so i divided it out among brooke’s aunts who were all so sweet and willing to help. one aunt did all the desserts, another provided the croissants, and her grandma provided the fruit arrangements.

that meant all i had to do food wise was prepare the salad and provide drinks & speaking of drinks, for the drink i ended up doing ice water and then a variety of chilled soda’s with some cut up limes to add to the soda. our family keeps diet coke from going out of style, and we all love it with lime, so i knew that would be a hit. a good idea when planning a shower/event is to keep your guests in mind. i knew there would be some younger kids attending, so along with the diet coke and lime’s, i also got some sprite and other soda’s, that way everyone would have a drink option. my original idea for the the drink was cucumber limeade, but again that little word budget kept creeping in!
