This is Tara, Cambria’s sister, and I am SO EXCITED to be doing my first post for Live to be Inspired. Whenever sweet potatoes appear in our Bountiful Basket, my husband bakes them into yummy sweet potato fries. I love me some sweet potato fries, but this time around I was excited to try a new recipe for Super Easy Sweet Potato Mash from Knorr.

I enlisted the help of a few of my favorite little chefs and in no time we had a dish that everyone gobbled up. Who knew tasty baby food and toddler food could be so easy?

The Chef

My little helpers are almost 5 and almost 3 so I put them in charge of washing the sweet potatoes before I peeled them.

After I peeled them, the little chefs tossed them into the pot and I boiled them until they were soft.

After we drained them, Chef Lily did the mashing and taste testing.
We added the Knorr Homestyle Stock and a little bit of butter …

and VOILA!
A dish perfect for all three of my little ones.
I had a little bowl myself and it was pretty tasty.

SUPER EASY SWEET POTATO MASH

A Chef Marco Pierre White Recipe                           

SERVES 6
PREP TIME: 5 Minute(s)
COOK TIME: 25 Minute(s)
INGREDIENTS
2-1/2 lbs. sweet potatoes, peeled and cubed
3 Tbsp. water
1 tub Knorr® Homestyle Stock – Chicken
4 Tbsp. Country Crock® Spreadable Butter With Canola Oil (I used regular butter)
PREPARATION

  1. Combine sweet potatoes with water in large microwave-safe bowl. Cover and microwave at HIGH 12 minutes or until potatoes are tender. (I boiled mine and it worked just as well)
  2. Remove from microwave and carefully remove cover. Stir in Knorr® Homestyle Stock – Chicken and Spreadable Butter. Mash or process in food processor until smooth.
  3. Watch your children GOBBLE it up!
